HEALTHY COCONUT CHOCOLATE MACAROONS
INGREDIENTS:
- 6 egg whites
- 1/4 tsp sea salt or pink salt
- 1/2 cup unpasteurized honey
- 1 tbsp vanilla
- 3 cups unsweetened shredded coconut
- 1/2 cup dark chocolate chips
- 1 tbsp coconut oil
DIRECTIONS:
- Preheat oven to 350F
- In your mixer, combine egg whites and salt and whisk on high (approx. 5 minutes)
- Add unpasteurized honey and vanilla and whisk until combined
- Turn off mixer. Add coconut 1 cup at a time and mix in using a soft spatula
- Take a scooper and transfer batter onto cookie sheet (lined w/ parchment paper) –batter should make 24-30 macaroons
- Bake 15-18minutes until slightly brown
- Let cool on cool on baking sheet for 10-15minutes then transfer to cooling rack
- For chocolate drizzle, melt chocolate and coconut in microwave or stove-top
- Mix the chocolate and oil thoroughly then drizzle over macaroons

Total time: 30minutes, prep 10minutes, cook 20minutes
