HEALTHY COCONUT CHOCOLATE MACAROONS

INGREDIENTS:

  • 6 egg whites
  • 1/4 tsp sea salt or pink salt
  • 1/2 cup unpasteurized honey
  • 1 tbsp vanilla
  • 3 cups unsweetened shredded coconut
  • 1/2 cup dark chocolate chips
  • 1 tbsp coconut oil

DIRECTIONS:

  1. Preheat oven to 350F
  2. In your mixer, combine egg whites and salt and whisk on high (approx. 5 minutes)
  3. Add unpasteurized honey and vanilla and whisk until combined
  4. Turn off mixer. Add coconut 1 cup at a time and mix in using a soft spatula
  5. Take a scooper and transfer batter onto cookie sheet (lined w/ parchment paper) –batter should make 24-30 macaroons
  6. Bake 15-18minutes until slightly brown
  7. Let cool on cool on baking sheet for 10-15minutes then transfer to cooling rack
  8. For chocolate drizzle, melt chocolate and coconut in microwave or stove-top
  9. Mix the chocolate and oil thoroughly then drizzle over macaroons

Makes: 24-30

Total time: 30minutes, prep 10minutes, cook 20minutes
